Desi Chicken Dum Biryani Recipe (Gharwali Style)

Ingredients
Chicken Marinade ke liye:
- 500 gram chicken (with bone)
- 1 cup dahi (curd)
- 2 tbsp adrak-lehsun ka paste (ginger garlic)
- 2 green chilies (finely chopped)
- 1 tsp haldi (turmeric)
- 1 tsp lal mirch (red chili powder)
- 1 tsp garam masala / biryani masala
- 1 tbsp lemon juice
- Salt as per taste
- Handful hara dhaniya (coriander) aur pudina (mint) – chopped
Rice ke liye:
- 2 cups basmati chawal – 30 mins bhigo ke rakhein
- 4 cups paani
- 1 bay leaf (tej patta)
- 2 cloves (laung)
- 2 green cardamom (elaichi)
- Salt to taste
Biryani Layering ke liye:
- 1 badi pyaz – barik kati hui aur golden brown tak tali hui
- 2 tbsp ghee ya oil
- Thoda sa kesar (saffron) – 2 tbsp doodh mein bhigo ke
- Hara dhaniya & pudina for garnish
Recipe Step by Step
1. Chicken Marinate Kijiye
- Chicken mein dahi, adrak-lehsun paste, masale, hara dhaniya, pudina, lemon juice daal kar achhe se mix kijiye.
- Isse kam se kam 1 ghanta fridge mein rakh dein. Zyada waqt mile to 3-4 ghante aur bhi accha.
2. Chawal Pakaiye
- Paani ubalayein, saath mein tej patta, elaichi, laung aur namak daalein.
- Bhige huye chawal daal kar 70–80% tak pakayein (thoda kaccha rehna chahiye).
- Pani nikal kar chawal alag rakh dein.
3. Dum ke liye Layering
- Ek heavy bottom handi ya pateela lein.
- Neeche marinated chicken daalein.
- Uske upar aadhe fry kiye hue pyaz, thoda dhaniya-pudina daalein.
- Ab upar se chawal ki layer daalein.
- Phir se baaki pyaz, kesar wala doodh, aur thoda ghee daal dein.
4. Dum Dena
- Handi ko dhakkan se band karke usse aate ya foil se seal kar dein.
- Ek tawa garam karein, uske upar handi rakhein.
- 15-20 minute slow flame par pakne dein.
- Gas band karke 10 minute resting mein chhod dein.
Serve Karein:
- Dahi ka raita
- Sirka waale pyaz (vinegar onions)
- Papad ya mirchi ka salan
Tips:
- Zyada spicy chahiye to extra green chilies ya biryani masala daal sakte ho.
- Biryani ko zyada hilayein mat, nahi to chawal toot jaayega.
- Veg version banana ho to chicken ki jagah mix vegetables ya paneer use karo.
